First the dough is naturally leavened, formed into ‘loaves’ and baked. The baked loaves are then cut into slices and baked a second time to enhance the flavour and make the slices crunchy and crumbly. It’s this unique crunchy-crumbliness that is the characteristic feature of Preti Lagaccio biscuits, which are so delicate they sometimes look broken or damaged. The importance of the human factor in the production process can also be seen in the irregular size of the slices. This is because the loaves are formed and sliced by hand so they aren’t all exactly the same, just like home baked and sliced bread. Lagaccio Light biscuits Lagaccio Light is a new product created exclusively by Preti for those who want the rich and crumbly taste of the classic Lagaccio “bis coctus” or “twice baked” biscuit, but with fewer calories and less cholesterol. Lagaccio Light biscuits are made with the same recipe as Preti Lagaccio Classic, but using only vegetable fat of the finest quality. |
